Cut the courgette into thin strips and the peppers in half. Drizzle them with olive oil, oregano, salt and pepper. Then grill them on the barbecue or on a hot grill, turning them regularly. Once roasted, cut the peppers into strips.
Spread the bottom halves of the bagels with smoked Cancoillotte.
Place slices of beef carpaccio, then strips of peppers and courgette, a few leaves of rocket. Close with the top half of the bagel.
